Unit Name: Intermediate Cake Preparation
Goals:
â—Š Upon completition of this unit, the student will continue the basic cake preparation and decoration techniques they have learned in the first level.
â—Š The student will prepare various types of cakes including both American and European style cakes, frame cakes and individual/ cupcakes.
â—Š Different decorating techniques will be explored including several typeds of flowers, piping, borders and more advanced techniques.

511 - Identify and practice cake decorating techniques including: royal icing, rolled fondant, gum paste, air brush designs and discuss edible images.

Instructional Activities:
Unit 7.1 - Intermediate cakes and decorating. The student will use the given recipes to prepare a standard two level cake with top and bottom borders, writing and flower sparys on the top.
Throughout the year, the students will practice with various types of cakes including advanced decorating techniques with the ultimate goal for seniors to prepare a display piece.
